Banana Cookies

These soft, chewy cookies are made with just oats, dates, applesauce, banana, and vanilla—no added sugar, flour, or dairy! Ingredients
  

  • 3 med Bananas
  • 2 cups Rolled Oats
  • 1 cup Dates pitted & chopped
  • 1-1 1/2 cup Applesauce unsweetened
  • 1 tsp Vanilla

Instructions
 

  • Preheat the oven to350°F (175°C) and line a baking sheet with parchment paper, spray with cooking spray
  • Mix the ingredients: In a large bowl, combine the mashed bananas, oats, dates, applesauce, and vanilla. Stir until well combined. LET IT SIT FOR 15-20 mins for the oats to absorb the moisture.
  • Form the cookies: Scoop tablespoon-sized portions of the dough onto the prepared baking sheet.
  • Bake: Place the cookies in the oven and bake for 12-15 minutes, or until the edges are golden brown.
  • Cool and enjoy: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely
  • Store in airtight container. They are moist and will mold. These cookies also freeze well.
